Barley Soup

Cooked with a pork knuckle for a long time, it tastes best: the barley soup is a typical dish on South Tyrolean menus

The barley soup is already a meal in itself. Cooked in water with the right meat and vegetables, the grain becomes viscous and creamy. Combined with a pork knuckle and completed with a dessert, e.g. roasted sweet chestnuts in autumn, it is a nice dish especially during the cooler seasons.

After such a meal we can guarantee that you have also done something for your health. Barley calms the stomach, binds toxins and stimulates intestinal activity. The water in which barley is boiled is cooling and very good for fever. Even a genetically caused too high cholesterol level can be controlled with the regular consumption of barley. Moreover, barley contains many vitamins including the vitamin B complex and free folic acid, important minerals and countless other healthy substances.

All in all, the barley soup is a healthy and tasty meal. By the way, it is often served at the Törggelen.
