MASSIMO MONTANARI: "AMARO, UN GUSTO ITALIANO"
From radicchio to artichokes, from coffee to digestives: bitterness plays a privileged role in the taste of Italians. No other European cuisine has such a marked predilection for that flavour. This distinctive trait has distant origins and is rooted in the encounter between peasant and high culture.
The organs of taste are the tongue and the brain. The former senses flavours, the latter evaluates them. The mechanism is not only biological, but also and above all cultural: it is a matter of habit, learning, and judgement. So, if we ask ourselves why the taste sensitivity of Italians is so attracted to bitter, the explanation is not to be found in genetics but in history. One of the greatest food historians explains it to us, delving into literary sources and treatises on botany, agriculture, cooking, dietetics. A surprising itinerary that brings into focus a fascinating and characteristic aspect of Italian culture.
