A fruit cake of the special kind is produced in South Tyrol. It is particularly popular in Christmas time.
The fruit bread has its origins in South Tyrol. Fruits and nuts refine the taste of this special bread. On farms this bread often has already been baked in November and in former times it used to be a popular present. Today only few women still prepare the so-called Zelten. This special kind of Christmas bread is basically composed of fruits and nuts and is a refined form of the original fruit bread. Bakeries and pastries have their very own recipe which is of course kept in secret.
These are the basic ingredients used for preparing Zelten: dessicated figs, hazel nuts, walnuts, pine nuts, almonds, red wine, honey, rum, orange, cinnamon and clove powder, nutmeg, little bread dough made of rye flour and wheat flour, fennel and anise seeds, salt and yeast, honey. Chopped and mixed through, the fruit and nuts dough is mingled with the bread dough, brushed with sugar water and baked. It must be stored for about two weeks.
Afterwards simply slice it and enjoy it as snack!
